The following recipes are by Certified Health Coach Dawn Kurth. Also present at New Canaan Healthfares' Earth Day celebration, Dawn shared some of her recipes for the creations that got devoured by customers who watched Dawn demo how simple it is to make healthful nutritious snacks with the greatest of ease!

Chia seeds are NOT just for chia pets any longer! They have resurrected as the legitimate super food! All ingredients available at New Canaan Healthfare!

5-Minute Raw Chia Energy Bars

6 large Medjool dates, pitted
2 tablespoons coconut oil
1/4 cup chia seeds
1/4 cup hemp seeds
1/8 teaspoon almond extract
Optional: shredded coconut, dried cherries

Pulse dates in food processor until paste forms. Put date paste in bowl and add coconut oil, chia seeds, hemp seeds and almond extract. Remove mixture and press into a small glass baking pan. Cut into bite size squares and eat immediately or freeze for a few minutes for a chewier bar!

Overnight Chia Seed Pudding

¼ cup Chia Seeds
1 ¼ cup Almond milk (or any non-dairy milk of choice)
2 tablespoons of maple syrup
1 teaspoon vanilla extract

Mix chia seeds, almond milk, maple syrup and vanilla extract in mason or similar jar. Put in refrigerator for minimum of 4 hours or overnight, stirring at least once after 30 or so minutes. Top with favorite fresh fruit, goji berries, chopped nuts, cinnamon, shredded coconut or sunflower seeds.

Chocolate variation: decrease maple syrup by half and add in 2 tablespoons of raw cacao powder!
